The Cooking

Place the sausage ring into a preheated pan, cook until lightly coloured, adding garlic, ginger, onion, and spring onion.

Once ingredients have caramelised add cherry tomato halves and fresh coriander.

Squeeze with lemon and rest to the side.

Roll out puff pastry and top the pan with a thick pastry lid.

Bake for 25mins at 165 degrees until the puff pastry lid is golden brown.

Rest for one minute and turn out onto your serving plate.

Robs Tips

  • Be generous with your pasty lid to give you extra crunchy edges

  • Add a little sugar if you require extra sticky sweetness

  • Never worry about food waste as the tarte freezes fab!

  • Use a small frying pan approximately 6inch diameter

  • Double the recipe to make a bigger tarte and serve your family portion

  • The tarte can be made in advance and re heated in a moderate oven for 5 minutes

  • The tarte eats great with thick natural yoghurt and green salad
